Potato Kielbasa Soup

Kilbasa potato recipes filled with cheese, crispy sausage chunks, and potatoes! This hot and cheese soup is perfect for lunch or dinner. This legacy in Eastern Europe clearly affected my life and diet.

I find myself part of all the ingredients and foods that I usually eat at home. That is the true inspiration behind my love for food. There is always hot soup and hot dogs. Lots of sausages. Thank you, Grandfather, for your contribution!

INGREDIENTS

  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 1/2 pounds potato, cut into cubes
  • ½ cup peeled and finely diced (2 large carrots)
  • ½ cup shredded parmesan cheese
  • ¼ cup chopped parsley
  • 1 pound kielbasa, cut into ½ inch pieces
  • 4 cups chicken stock
  • 2 garlic cloves, minced
  • 2 cups shredded cheddar cheese
  • 2 cups milk
  • ½ cup finely diced yellow onion
  • ½ teaspoon kosher salt
  • ½ cup finely sliced celery (23 stalks)

DIRECTIONS

  1. Add olive oil to the oven or broth in the Dutch way, then place it on medium heat. Add sausages and cook for 5-6 minutes, stirring constantly. Use a slotted spoon to remove sausages.
  2. Add garlic, onion, carrots and celery, then saute for two minutes.
  3. Add chicken and potato soup. Boil the mixture and reduce the heat. Cover and cook for 15 minutes, or until the potatoes are tender.
  4. Add cooked sausages, milk, cheddar cheese, parmesan cheese, salt and pepper. Cook on low heat for 5-10 minutes until the cheese has melted.
  5. Stir the coriander before serving.
