Cheesy Chicken Fritters Recipe

Ingredients

Ingredients for Chicken Fritters :

  • 1/2 tsp salt or to taste
  • 1/3 cup all-purpose flour or cornstarch or potato starch for gluten free
  • 1/8 tsp black pepper
  • 4 oz mozzarella cheese (1 1/3 cups shredded)
  • 1/3 cup mayonnaise
  • 2 Tbsp Extra light olive oil to saute (or any high heat cooking oil)
  • 1 1/2 Tbsp chopped fresh dill
  • 2 large eggs
  • 1 1/2 lbs chicken breasts (3 large)

Ingredients for Garlic Aioli Dip (Optional)

  • 1/3 cup mayonnaise
  • 1/8 tsp black pepper
  • 1/4 tsp salt
  • 1/2 Tbsp lemon juice
  • 1 garlic clove pressed

Instructions

  1. Using a pointy knife, cube chicken into 1/3″ thick pieces and region them in a large blending bowl. Tip: If chicken breast is partially frozen, it’ll be a touch bit less difficult to slice.
  2. Into the mixing bowl, add last batter components: 2 eggs, 1/3 cup mayonnaise, 1/three cup flour, 1 1/3 cups shredded mozzarella, 1 half of Tbsp dill, half tsp salt and 1/8 tsp black pepper, or season to flavor. Stir the mixture till well mixed, cover with plastic wrap and refrigerate 2 hours or in a single day.
  3. Heat a large non-stick pan over medium warmth and upload 2 Tbsp oil. When oil is hot, add the chook aggregate a heaping Tablespoon at a time. Slightly flatten out the tops with the again of your spoon and sauté uncovered 3-4 min on the primary facet, then flip and saute three min on the second facet or till outsides are golden brown and bird is completely cooked through* Repeat with final fritters adding greater oil as wished.
  4. To make the aioli (if using), combine all substances in a small bowl or measuring cup and stir together until easy.

Notes

To test for doneness, cut a fritter in half of and the chook need to be absolutely white inner. If your bird patty is browning too speedy, adjust your warmth down.
